What is egg tofu ?
Egg Tofu is Japanese steamed tofu made of eggs and dashi mixture that is steamed till firm, chilled, then served with a dashi and soy sauce broth. In Japan, we call this dish Tamagodofu. Even though it's called “tofu”, egg tofu does not include soybeans or nigari.
It sounds hard to make tamago tofu but it is a very simple process.
1. Beat eggs
2. Pour into dashi mixture
By lifting the flexible inner plate for easier to take out soft and juicy egg tofu without breaking it into pieces.
