Gyuto knives, which are used for meat, fish and vegetable have fewer variations compared with traditional Japanese knives. Due to its ease of use, Gyuto has been well incorporated in the field of Japanese cooking.

This knife is made of VG10 with beautiful damascus pattern blade which gives excellent cutting performance and razor sharp.  The widely curved heel to comfortably place your finger. The handle is made of micarta which delivers durable kitchen knife handles with strong performance for many years of reliable use.  Slightly curved shape handle makes relax, comfortable hold, it keeps palm in same place on the handle.

The blade is made of VG10(V Gold 10), razor sharp edge and rust resistance steel, in between 33-layer hammer eyes damascus. These knives have a hard special alloy thrust into 33 Damascus layers.

 History of Gokaden

Japanese swords were researched after every battle and were renovated to improve its effects.  Furthermore, many talented blacksmiths started emerging during the late Heian to the Kamakura period and five producing districts-Yamato, Bizen, Yamashiro, Soushu, Mino-were established, each with their own style and technique in forging Japanese swords.  In the Katana industry, these five areas became generically known as the “Gokaden” during the Meiji period(1868-1911)

After MASA visited these areas and he said to himself, GOKADEN would be the perfect name for his knives.  His knives are reflection of traditional art of Japanese sword which hand forged by skilled craftsman, sharp as a razor and edge retention is like no other.  The Japanese tradition of beauty and excellence that’s what HITACHIYA KNIVES are.
