The santoku, meaning ‘three virtues’, also called "bunka bocho", is a multi-purpose knife.

Prioritized for vegetables and fish. These are generally flatter than gyuto and have a less pointy tip. Because they are flatter, the wrist is in a more natural position and the shoulder does not need to be raised as high. These knives do not require as much room to cut, however, these knives are not used when doing Western cutting techniques that may require more room such as a gyuto knife would. These are the most popular knives in most Japanese homes.

This gokaden series santoku knife, blade is made from AUS-10 which is produced by Aichi Steel the Japanese Tokai city in Japan.  AUS-10 has high-carbon content just like VG-10 which brings a great performance and razor sharp.

Applying Nashiji finish (like a Pear skin) helps release food form surface which means does not stick too much on the surface.  It’s traditional style in Japan.

The Beautiful blue Handle is made of natural wood and canvas fabric.  Slight curved handle is comfortable fit to hold it long time.

Use & Care
- Do not attempt to cut, hit or chop frozen products or bones. The blade can chip or break.
- Hand wash with warm water and towel dry.
