About Yanagiba knife

The most popular knife for cutting fish and also called shobu-bocho(sashimi knife). It is used to highlight different textures of fish in their techniques: hirazukuri to pull cut vertically, usuzukuri to pull cut thin vertically, and sogizukuri to pull cut at an angle. It is used to skin and sometimes scale and de-bone certain fish (for instance salmon).Sakimaru, Kensaki or kiritsuke tip yanagiba have an angled tip and are generally heavier and less sloping.  General size is 210 mm to 330 mm.

Mirror finished blade

Knife mirror finishing refers to the process of polishing a knife blade to achieve a highly reflective surface that resembles a mirror. This is typically done using increasingly fine abrasives, such as sandpaper or polishing compounds, to remove any imperfections and achieve a smooth, shiny surface.

About Sakai Takayuki GenbuKnife 

- Sakai Takayuki is well-known as the largest knife maker in Sakai. The Genbu series is named after the Black Tortoise who is said to protect Kyoto on the north side, being one of the four guardian spirits that protect the city. The knives are made by master blacksmith Itsuo Doi and sport a mirror polish and the sakimaru tip, which while more common on the YANAGIBA. These knives also come with a matching black saya.

Blacksmith: Itsuo Doi

Itsuo Doi is a renowned Japanese knifemaker and has been making knives for over half a century. He is the son of the award-winning and iconic Japanese blacksmith Keijiro Doi from whom he learned the skills and techniques of forging with high carbon steels such as shirogami and aogami (white steel and blue steel).
