Deba bocho is Japanese style knife and used to cut fish, though also used when cutting meat.  They come in different sizes, sometimes up to 30 cm (12 inches) in length. The deba bōchō first appeared during the Edo period in Sakai, Osaka.  It is designed to behead and fillet fish. Its thickness, and often a more obtuse angle on the back of the heel allow it to cut off the heads of fish without damage. The rest of the blade is then used to ride against the fish bones, separating the fillet. Traditionally, these are made of carbon steel, which needs regular maintenance and oiling to prevent rust.

The deba is not intended for chopping large diameter bones.

Using Natural Buffalo Horn for handle gives it a luxurious feel. The handle that is well balanced with the white steel blade.

Use & Care
- Do not attempt to cut, hit or chop frozen products or hard bones. The blade   

  can be chipped or broken.
- Hand wash with warm water and towel dry.

History of Gokaden

Japanese swords were researched after every battle and were renovated to improve its effects.  Furthermore, many talented blacksmiths started emerging during the late Heian to the Kamakura period and five producing districts-Yamato, Bizen, Yamashiro, Soushu, Mino-were established, each with their own style and technique in forging Japanese swords.  In the Katana industry, these five areas became generically known as the “Gokaden” during the Meiji period(1868-1911)
