Sakai Takayuki Hongasumi MIOROSHI DEBA 240mm(9.5")/with sheath

These knives were created with the painstaking efforts of the top blacksmith craftsmen and knife grinders in Japan. They are the most reliable series of the Sakai Takayuki products and are made with Yasuki white-3 steel.

Deba is indispensable for cleaning fish. It is used to cut through hand bones and to filet the fish. It is constructed with a thick spine while the tip is thin with an extremely sharp edge. Deba was most common knives use in home kitchen. Professionals have a range of Deba and choose a suitable size depending upon the size of the fish.

Mioroshi Deba has a narrower and thinner blade than Deba. This can be used as Deba or Yanagiba and often used at fish markets. Heels with a sharp edge makes it unsuitable for hard bones.
